Chianti ClassicoThis oil is produced almost exclusively from olives of the Coreggiolovariety hand-picked in numerous sweeps of the olive groves in October before the olives are completely ripe. As a result the yield is extremely low but this is compensated for by an oil of excellent quality with an acidity of less than 0.2 and a substantially reduced number of peroxides.The olives are processed at low temperatures in keeping with themodern philosophy of oil-making.This permits extraction of an oil thatis extremely fresh and endowed with outstanding qualities in terms ofaroma and flavour. The green oil has intense fruity aromas. Piquant ithas a lightly sweet vein and offers notes of apples and artichokes.Average annual production amounts to only a few thousand half-litrebottles
