Legend has it the Madeira came into being when barrels of wine from the island were used as balast in the hold of ships bound for the indies. After a long hot journey it was found that the resulting wine had become cooked, in effect Maderised. It is this quality of burnt caramel that gives Madeira its unique quality and because of the relatively high levels of natural acidity combined with sweetness and alcohol this is one of the longest lived wines in the world.
